Tip: add a sprig of fresh mint when boiling peas, or serve with finely diced spring onions for a change. Stir cooked peas into homemade mixtures for fishcakes and vegetarian samosas.

Serving suggestion: pea pur?e is a very dramatic colour and the flavour can be surprisingly different too when the peas are mashed or pur?ed with a little butter and mint. Especially good with white fish, salmon or mackerel.
