Tip: these little juicy fruits with their hard outer skin are ideal for picnics and lunch boxes because they do not bruise easily. Peel off the skin and eat the juicy white flesh, discarding the large smooth dark stone in the centre. Peeled, halved and stoned lychees make a lovely Oriental salad with mandarin orange segments and slices of crispy Asian pear.

Serving suggestion: Chinese pork stir-fries sometimes contain lychees (peeled, halved and stoned) along with pineapple. Stir fry green peppers and pork and add the fruit at the end of cooking, along with sweet and sour sauce, which is heated through before serving.
