Tip: Chill the coconut, then drill a hole through the hard shell and insert a straw to drink the cold coconut water inside. This is not coconut milk, which is made from the white fibrous flesh of the coconut

Serving suggestion: make your own fresh coconut milk by liquidising the flesh of the coconut with 3 times its volume of boiling water. Press the mixture through a sieve to produce thick coconut milk. Use it in Thai and Indonesian cooking, especially in fish and vegetable dishes. Also use in Caribbean dishes such as rice and peas, and to make delicious ice cream.
