Tip: cook cauliflower florets with broccoli and thinly cut or sliced carrots to add colour and flavour when serving cauliflower as a vegetable. Goes well with most meat, fish and pasta dishes.
   
Suggestion:
 
Serving suggestion: cauliflower cheese is easy to make for a lunch or supper dish. Partly cook the cauliflower florets by boiling or steaming until almost cooked (about 5 minutes). Drain and put in a buttered ovenproof dish. Pour over a cheese sauce. Top with breadcrumbs mixed with grated cheese (half and half) and bake in a moderate oven (180?C/fan oven 170?/gas 4) for 25 minutes. To do this in a saucepan, cook the cauliflower in the cheese sauce for 15 minutes over a low heat with the sauce just simmering (almost boiling), transfer to a serving dish, sprinkle over the crumb cheese mixture and finish under a moderate grill to crisp the topping.
